Try this quick and tasty loaded toast as a breakfast or light lunch, with the benefits of long-lasting energy, fibre and healthy fats to fuel your body.

4 large slices of light rye sourdough bread (or other wholegrain bread)
120g soft goat’s cheese
1 medium avocado, cut in half and sliced
1 cup rocket leaves
100g sun-dried tomatoes halves, drained
Pinch of pepper
Pinch of chilli flakes (optional)
- Toast the bread until browned to your liking.
- Spread a quarter of the goat’s cheese on each slice of toast, and top with a quarter of the avocado slices, rocket leaves and sun-dried tomatoes.
- Sprinkle on a pinch of pepper and chilli flakes (if using).
- Cut each toast in half and divide between 4 plates to serve.
